My Cousin’s Secret Peach Ice Cream

As I have a few more secrets in store, I decided to share with you another simple recipe, this time taught by my cousin. It’s a simple (but delicious) peach ice cream recipe! As I know that this type of recipe is becoming more and more popular, I decided to publish this version of mine (my cousin’s, actually…).

Equipment

  • Ice cream maker

Ingredients
  

  • 2 ½ cups White sugar
  • 6 large Eggs beaten
  • 12 Fresh peaches pitted and chopped
  • 4 cups Heavy cream
  • 2 cups Half-and-half cream
  • 2 tsps Vanilla extract
  • ¾ tsp Salt

Instructions
 

  • In a large bow, mix the sugar and eggs together until smooth.
  • Chop two of the peaches into very small pieces and save it for later. Purée the rest of the peaches in a blender or food processor.
  • Stir the peach purée into the egg mixture.
  • Add to the previous mixture the sliced peaches, cream, half-and-half, vanilla and salt. Make sure it’s all blended.
  • Pour the mixture into your ice cream maker and freeze it according to the manufacturer’s instructions, for about 20 minutes.
  • Transfer the mixture to an airtight container and freeze until firm (it takes about 4 hours).
