One-Pan Pork Tenderloin with Peppers and Onions

Ingredients
  

  • 1 Pork tenderloin about 1 ½ pounds
  • 1 tbsp Olive oil
  • 2 medium Onions sliced into rings
  • 1 Red bell pepper sliced
  • 1 Green bell pepper sliced
  • 1 tsp Garlic powder
  • 1 tsp Parsley dried or fresh
  • Pinch of Nutmeg
  • 1 tsp Paprika
  • 1 tbsp Tomato paste
  • ¼ cup White wine or chicken stock as a substitute
  • Salt and ground pepper to taste

Instructions
 

  • Preheat the oven to 425°F (220°C). Pat the pork tenderloin dry with a paper towel and season it with ½ tsp of salt.
  • Heat 1 tbsp of olive oil in an oven-safe skillet (I used a cast iron skillet) over medium heat. Once the oil is hot, add the pork tenderloin and sear it on all sides until evenly browned. Remove the pork from the skillet and set it aside on a plate or cutting board.
    Note: This step is just to seal the exterior; the pork should not be fully cooked yet.
  • In the same skillet, add the onion rings. If needed, add a little more olive oil to prevent sticking. Cook the onions over medium heat until they become soft, about 5 minutes.
  • Next, add the red and green peppers, followed by the tomato paste (1 tbsp) and enough white wine to cover the bottom of the skillet. Stir everything well to combine, then let it cook for another 5 minutes, allowing the flavors to blend and the liquid to reduce slightly.
  • Sprinkle the vegetables with 1 tsp garlic powder, 1 tsp parsley, a pinch of nutmeg, 1 tsp paprika, and a generous amount of ground pepper. Add a bit more salt to taste and stir to combine. Let it cook for just 1-2 minutes to release the aromas.
  • Place the seared pork tenderloin on top of the vegetables. Spread a small amount of garlic and tomato paste over the pork using a spoon to evenly coat the surface. This will enhance the flavor as it cooks.
  • Place the skillet in the preheated oven and roast for about 15 minutes, or until an internal thermometer registers 145°F to 150°F for perfectly cooked pork.
  • Remove the skillet from the oven and let the pork tenderloin rest for a few minutes. Slice the pork into even pieces and serve with the flavorful sauce and vegetables spooned over the top to enhance the taste. Enjoy!
