- 1 cup Peanut butter natural, unsweetened
- ½ cup Granulated erythritol or another keto-friendly sweetener
- 1 tsp Vanilla extract
- ¼ tsp Baking soda
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, combine the peanut butter, sweetener, vanilla extract, and baking soda. Mix until well combined.
Scoop out tablespoon-sized portions of dough and roll them into balls. Place the balls on the prepared baking sheet and flatten them slightly with a fork, making a crisscross pattern on top.
Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly browned.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. The cookies will firm up as they cool.
