4-Ingredient Keto Peanut Butter Cookies Recipe

Who knew that just 4 ingredients were more than enough to make delicious cookies! In fact, there could even be just 3, if you decide to remove the vanilla extract from the recipe… But I wouldn’t do that! Check out the ingredients below and start preparing your delicious keto cookies!
Ingredients:
- 1 cup peanut butter (natural, unsweetened);
- 1/2 cup granulated erythritol (or another keto-friendly sweetener);
- 1 teaspoon vanilla extract;
- 1/4 teaspoon baking soda.

Step 1 – Preheat Oven
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, combine the peanut butter, sweetener, vanilla extract, and baking soda. Mix until well combined.

Step 3 – Form Cookies
Scoop out tablespoon-sized portions of dough and roll them into balls.

Place the balls on the prepared baking sheet and flatten them slightly with a fork, making a crisscross pattern on top.

Step 4 – Bake
Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly browned.
Step 5 – Cool
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. The cookies will firm up as they cool.

As you can see, your cookies are ready in less than 20 minutes! It’s fast, simple and cheap. It’s much more worthwhile than buying those cookies that are sold in the supermarket and you never know what’s in them!
