Red Velvet Crinkle Cookies Recipe

Below are the ingredients you need to make these red velvet cookies:

Ingredients (Makes ~18 cookies)

  • 1 box red velvet cake mix (about 430g / 15.25 oz)
  • 2 large eggs
  • 1/3 cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar, for rolling

Optional add-in:

  • 1/2 cup white chocolate chips for extra sweetness.

Instructions:

Follow this simple preparation process to make your red velvet cookies flavorful and chewy:

  1. The first thing is to preheat your oven. 175°C / 350°F is the preferred temperature level.
  2. Line a baking sheet with parchment paper.
  3. Combine your cake mix, eggs, oil, and vanilla in a large bowl. Ensure you stir until a thick dough forms.
  4. Afterwards, scoop the dough into small balls. About 1 tablespoon is good enough for each.
  5. Roll the scooped dough generously in powdered sugar.
  6. Place each dough on your well-lined baking sheet. Leave enough space between the cookies. This creates room for them to spread.
  7. Bake for 12-14 minutes or until the cookies are crinkled and set around the edges with the centres still soft.
  8. Remove from the oven and let your cookies cool down for 5 minutes.
  9. Transfer them from the baking sheet to a wire rack.

Can I Make These Cookies Ahead of Time?

Red velvet crinkle cookies

Yes, you can make these cookies ahead of time. They are one of my favorite picks for prepping ahead.

Simply make the dough in advance and store it in the fridge for up to 2 days. When you are ready to bake, let your “frozen” dough soften a little before rolling into balls.

If you plan to make these cookies at a later date, it’s best to keep the dough in the freezer. With this, it can last for up to 2 months. Now, your dough balls MUST be unrolled in sugar.

When ready to bake, roll them in powdered sugar and bake right away from the frozen state.

Just add about 1 extra minute to the baking time.

Furthermore, baked cookies freeze quite well. Let them cool fully before transferring them into an airtight container or bag.

Some Storing & Freezing Tips

You can store your cookies at room temperature for up to 5 days. Place them in an airtight container and add a slice of bread to keep them soft.

If you want to store for up to 2 months, let the cookies cool completely, then freeze in a zip bag for up to 2 months. Ensure you thaw them properly at room temperature. This could take up to 2 – 3 hours.
