My Favorite Carrot Cake Recipe

As I mentioned earlier, this is the simplest carrot cake recipe you will ever find.
Without wasting much time, let’s dive in!
Ingredients (for 6 to 9 slices)
Below are the ingredients you need:
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 tsp vanilla extract
- 1 cup finely grated carrots (about 2 medium carrots)
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
Optional: 1/4 cup chopped walnuts or raisins
Quick Cream Cheese Frosting (Optional but perfect!)
If you want to add cream frosting to your carrot cake, you can get the best flavor and texture using these ingredients:
- 100g cream cheese, softened
- 2 tbsp soft butter
- 1/2 cup powdered sugar
- 1/4 tsp vanilla extract (whisk or beat until smooth before spreading on cooled cake).
Easy Step-by-step:
Below are the simple preparation steps to make your carrot cake effortlessly flavorful and moist.
- Preheat your oven to 175°C / 350°F.
- Get your 8-inch round or square baking tin. Before use, ensure you grease and line it with parchment paper.
- Whisk together eggs, oil, sugar, and vanilla in a large bowl. Keep mixing until it has a smooth texture.
- Put in the grated carrots.
- Add flour, baking soda, baking powder, cinnamon, and salt into the mix. Keep stirring until everything is combined. (Avoid overmixing).
- After doing this, pour the mixture into your pan and bake for 32 – 35 minutes, or until a toothpick comes out clean.
- Don’t serve or add frost until it has cooled completely.
