- 1 ½ cups (180g) all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- ¾ cup (170g) unsalted butter, softened
- 1 cup (200g) sugar
- 2 eggs
- Zest of 2 lemons
- 2 tbsp lemon juice
- ½ cup (120ml) milk or plain yogurt
- 1 tsp vanilla extract
For the glaze (Optional):
- 1 cup (120g) powdered sugar
- 1–2 tbsp lemon juice
- Extra lemon zest for topping
- Lemon slices (for decoration – optional)
Easy Step-by-Step:
- Preheat your oven to 175°C (350°F).
- Grease a round or loaf cake pan with oil.
- Cream butter and sugar together until it is light and fluffy.
- Mix the dry ingredients in a separate bowl.
- Add half of the dry mix to the wet ingredients, then the milk/yogurt comes next, before the rest of the dry mix.
- Stir until everything is well combined.
- Pour the batter into your prepared pan and smooth the top.
- Bake for 40-45 minutes or until a toothpick comes out clean.
- Let the cake cool for 10-15 minutes before removing from the pan.
For the glaze:
- Whisk powdered sugar with lemon juice until it forms a smooth mixture.
- Drizzle over the cooled cake.
