- 400g cottage cheese (well-drained or farmer’s cheese)
- 1 large egg
- 4 – 5 tbsp flour (plus extra for rolling)
- 1 tbsp semolina (optional, for structure)
- 2 tbsp sugar
- 1 tsp vanilla extract
- Pinch of salt
For Serving:
- Strawberry sauce or coulis (see below)
- Thick yogurt, sour cream, or crème fraîche
- Fresh strawberries and mint (optional)
Easy Step-by-Step:
1) Mix the Dough
In a large bowl, mash or stir the cottage cheese until smooth. Then, add the egg, sugar, salt and vanilla into the mix.

Stir in the flour (and semolina if you are using) until it forms a soft dough. Ensure it is not too soft or sticky.
2) Shape The Gnocchi
Before doing this, flour your hands and surface. Roll the dough into a log and slice into thick, bite-sized rounds.

Gently flatten each piece with your fingers.

You can use a fork to make a small disc with ridges.
3) Prepare for Baking
Place the gnocchi on a baking tray that’s lined with parchment.
