In this section, you will discover more about the ingredients needed to make this snack. I will also walk you through the preparation process involved. Ready? Let’s go!

Ingredients

Ingredients for the crust:

Below are the ingredients you need to make nectarine galette:

  • 1 ¼ cups (150g) all-purpose flour
  • 1 tbsp sugar (regular white sugar)
  • ½ tsp salt
  • ½ cup (115g) cold unsalted butter, cubed
  • 3 – 4 tbsp ice-cold water
  • 1 tsp lemon juice (optional, adds tenderness to the crust)

Ingredients for the filling:

  • 3 ripe nectarines (or peaches), thinly sliced
  • 1½ tbsp granulated sugar (for fruit)
  • 1 tsp lemon zest or juice (to brighten the fruit flavor)
  • 1 tbsp cornstarch or flour (helps thicken fruit juices)
  • 1 tbsp brown sugar (optional, adds depth and caramel notes)

Easy Step-by-Step:

Step 1: Make the dough

In a large bowl, whisk together the flour, sugar, and salt.

Add cold cubed butter and use your fingers or a pastry cutter to mix until the texture is crumbly with pea-sized bits of butter.

Lemon

Pour in lemon juice and ice water (one tablespoon at a time). Keep mixing until the dough comes together.

Mixing everything together

Wrap in plastic wrap and let it chill for at least 30 minutes.

Tips:

  • When mixing in the lemon juice and ice water, don’t overwork it.
  • The dough should hold when it is pressed. However, it should not be wet.

Step 2: Prepare the nectarines

Thinly slice your nectarines.

Toss them in a bowl with granulated sugar, lemon zest (or juice), and cornstarch.

Set this aside while the dough rests. This lets the juices release slightly.

Step 3: Roll out the dough

Once the dough is chilled, roll it out on a lightly floured surface (or parchment paper) into a circle about 12 inches in diameter and ⅛ inch thick.

Roll out the dough

Transfer this to a baking sheet if it is not on parchment paper.

Step 4: Assemble the galetter

Arrange the nectarines in overlapping concentric circles, leaving a 2-inch border around the edge.

Assemble the galetter

If there are any remaining juices, pour them over the top.

Fold the edges

Fold the edges of the dough up and over the fruit.

Step 5: Finish the edges

Brush the crust with a well-beaten egg and sprinkle it with coarse sugar. This gives the dough a golden, crispy edge.

Step 6: Bake

Preheat your oven to 190°C (375°F) for 35 – 40 minutes.

Bake the dough for 35 – 40 minutes, or until the crust is golden and the fruit is bubbling.

Step 7: Cool and serve

Before serving, let the dough cool for at least 10-15 minutes.

Afterwards, slice and dust it with powdered sugar!

You can serve it plain or with whipped cream or ice cream.

Why Add Lemon Juice to the Crust and Filling?

Adding lemon juice to the crust makes it tender. For the filling, lemon juice adds a bright, tangy flavor, and this goes a long way in adding THAT EXTRA SATISFYING effect, which makes every mouthful a classic experience.

Even if it’s a little, it goes a long way!

Do I Need to Chill the Dough?

Yes, you need to chill the dough to prevent it from shrinking. Furthermore, it makes the dough firm enough to handle when shaping or finishing the edges. 30 minutes in the fridge is good enough!
