- 1 ¼ cups (150g) all-purpose flour
- 1 tbsp sugar (regular white sugar)
- ½ tsp salt
- ½ cup (115g) cold unsalted butter, cubed
- 3 – 4 tbsp ice-cold water
- 1 tsp lemon juice (optional, adds tenderness to the crust)
Ingredients for the filling:
- 3 ripe nectarines (or peaches), thinly sliced
- 1½ tbsp granulated sugar (for fruit)
- 1 tsp lemon zest or juice (to brighten the fruit flavor)
- 1 tbsp cornstarch or flour (helps thicken fruit juices)
- 1 tbsp brown sugar (optional, adds depth and caramel notes)
Easy Step-by-Step:
Step 1: Make the dough
In a large bowl, whisk together the flour, sugar, and salt.
Add cold cubed butter and use your fingers or a pastry cutter to mix until the texture is crumbly with pea-sized bits of butter.

Pour in lemon juice and ice water (one tablespoon at a time). Keep mixing until the dough comes together.

Wrap in plastic wrap and let it chill for at least 30 minutes.
