Easy Bacon Egg Muffins Recipe

In this section, you will find out more about the ingredients you need, PLUS my easy step-by-step process while making bacon egg muffins.
Ingredients (Makes 6–8 muffins)
- 6 large eggs
- 4 slices of cooked bacon, chopped
- ½ cup shredded cheese (cheddar or mozzarella works well)
- ½ cup diced bell pepper (any color)
- ¼ cup chopped onion (optional)
- Salt & pepper to taste
- Cooking spray or muffin liners
Easy Step-by-Step:
- Preheat the oven to 180°C (350°F).
- Grease a muffin tin or use paper liners.
- Cook the bacon until it is crispy.
- Chop it into small pieces.
- In a bowl, whisk together the eggs and season with salt and pepper.
- Add chopped bacon, cheese, bell pepper, and onion.
- Stir everything to combine.
- Pour the mixture evenly into muffin cups, filling about ¾ full.
- Bake for 20 minutes or until the centers are set and slightly golden on top.
- Let it cool slightly before removing.
- You can serve warm or store for later.

Not a Fan of Bacon?
What if you are not a fan of bacon? Can you still enjoy egg muffins? ABSOLUTELY! All you need are a few swaps.
For example, you can try diced ham, cooked sausage, or mushrooms.
If you want veggie-stuffed muffins, then add a lot of veggies, or stick to all veggies.
With these swaps, your muffins would still taste as great.
