My mom wears a retainer and has trouble eating hard foods, so I searched and searched until I found a recipe for soft yet incredibly tasty cookies that she could eat. Luckily, I stumbled upon this recipe. It quickly became my favorite recipe (and my mom’s!) because it’s simple to make, quick and perfect for make-ahead.

I usually make a big batch of these cookies every weekend, give them to my mom, and she freezes them so she can bake them every morning to take to work. It’s a very simple, quick, and versatile recipe.
So, if you want some quick, make-ahead, and healthy cookies, you need to try these ones!
Here’s The Ingredients You Need (12 Cookies)
The ingredients below make about 10 to 12 cookies. I usually double the recipe to make a large batch, since they can be frozen for up to 2 months.
- 2 ripe bananas (mashed)
- 1 ½ cups rolled oats (quick oats = softer, regular oats = chewier)
- 2 tbsp peanut butter
- 1 tsp vanilla extract
- ½ tsp cinnamon
- ½ tsp baking powder
- ¼ cup dark chocolate chips or raisins
- 2 tbsp honey or maple syrup (optional)
How to Make These Delicious Soft Cookies
Making these healthy cookies is super simple! Just mix all the ingredients and shape them into little cookies. I took some photos so you can follow the steps as easily as possible.
First of all, preheat oven to 350°F (175°C). Line a tray with parchment.

Now you just need to add oats and baking powder, and mix until dough holds together. You can see the consistency of the dough in the photo below.


Now it’s the best part! You just need to fold in chocolate chips or raisins. I prefer chocolate chips, dark chocolate and sugar-free, but raisins are also delicious in these cookies!
Scoop dough (about 2 tbsp each) onto tray, flatten slightly.


Now it’s baking time! Bake 12–14 minutes until edges are golden but centers stay soft. The cookies will still be very soft when you take them out of the oven, but don’t worry, you just need to let them cool for 5 to 10 minutes so they firm up!

And voila, your cookies are ready to eat! If you want, you can freeze these cookies (before baking) and bake them only when you feel like it. They keep well frozen for about 2 months.
If you want to bake them all at once, you can always store them in a sealed container in the refrigerator for up to 3 days.
