It’s fresh cherry season, so we have to make the most of this delicious fruit to make some homemade sweets!
As cherries are a fruit that spoils very quickly, we have to use them in every possible and impossible way. So, nothing better than a delicious pie to use up all the cherries at home!
This recipe is divided into two parts, the first part is the pie crust (you can use a pre-made one, if you want) and the second part is the pie recipe.
It may take a while to do, but believe me it will be worth it!

Let’s start by looking at the ingredients needed for the pie crust. If you already have the pie base made or want to use one from the supermarket, you can skip this part.
Let’s Start With The Pie Crust

Making this pie crust is very simple. This recipe is one of my favorites, so I’m sure you’ll like it too.
Ingredients:
- 2 1/2 cups all-purpose flour, plus more to dust
- 1/2 Tbsp granulated sugar
- 1/2 tsp sea salt
- 1/2 lb COLD unsalted butter, (2 sticks) diced into 1/4″ pieces
- 7 Tbsp ice water, (7 to 8 Tbsp)

In a food processor, pulse together flour, sugar, and salt a few times to mix.
Step 2 – Incorporate Butter
Add cold, diced butter. Pulse until the mixture forms coarse crumbs with some pea-sized pieces. Ensure the mixture stays dry and powdery.
Step 3 – Add Water
Add 7 tablespoons of ice water. Pulse until the mixture forms moist clumps. Test by pressing dough; if it sticks together, it’s ready. If not, add more water, a teaspoon at a time.
Step 4 – Form Dough
Transfer the mixture to a work surface. Gather into a ball without kneading. Divide into two disks.
Step 5 – Chill
Wrap in plastic wrap and refrigerate for 1 hour before use.
Now that we have the pie crust ready, we can move on to the second part, the fresh cherry pie! Let’s go?!?
Let’s Make the Fresh Cherry Pie!

Let’s make fresh cherry pie once and for all! Believe me, you won’t regret “wasting time” making this delicious pie. Everyone here at home loved it, especially my nephews (they have a sweet tooth, but it counts anyway!).
Ingredients:
Start by gathering all the necessary ingredients. Hopefully, you have them all in your pantry. Check the list below.
- Pie Crust
- 4 and 1/2 cups halved & quartered pitted fresh cherries
- 2/3 cup (135g) granulated sugar
- 1/4 cup (28g) cornstarch
- 1 Tablespoon (15ml) lemon juice
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon almond extract
- 1 Tablespoon (14g) cold unsalted butter, cut into small cubes
- egg wash: 1 large egg beaten with 1 Tablespoon (15ml) milk
Cherry Pie Recipe Instructions:
Now that you have all the necessary ingredients, start step by step. In fact, the step by step is simpler than it seems. Let’s start?!?
Step 1 – Prepare the Filling
In a large bowl, combine cherries, sugar, cornstarch, lemon juice, vanilla, and almond extract. Cover and refrigerate while rolling out the pie dough, or for up to 24 hours.
Step 2 – Roll Out Dough
On a floured surface, roll out one chilled dough disc into a 12-inch circle. Place in a 9-inch pie dish, smoothing it out.
Now, spoon cherries into the crust with a slotted spoon, reserving the juice and refrigerate the pie.
Step 3 – Reduce Juice
Simmer reserved juice in a saucepan for 3-4 minutes until thickened. Cool for 5 minutes, then pour over the cherries, and gently toss. Dot with butter.
Step 4 – Preheat Oven
Preheat to 400°F (204°C).
Step 5 – Create Lattice
Roll out the second dough disc to a 12-inch circle.
Cut into strips and weave into a lattice over the pie.
Seal edges, trim excess, and crimp or flute.
Step 6 – Finish and Bake
Brush with egg wash and sprinkle with coarse sugar.
Bake for 20 minutes, reduce temperature to 375°F (190°C), and bake for 30-40 minutes until golden and bubbling.
Use a pie crust shield if needed after the first 20 minutes.
Final Step – Cool and Serve
Cool on a rack for 3-4 hours before slicing, and if you want, store leftovers in the refrigerator for up to 5 days.
