These are 11 quick grilling marinades you can mix in a bowl in under 5 minutes, toss with whatever you’re grilling, and cook over high heat without ending up with bland food.
No weird ingredients. No long lists. Just big flavor on repeat.
1) Lemon Garlic Herb Marinade (for grilled chicken + vegetables)

Fresh. Bright. Garlicky. The “everything tastes better now” marinade!

Makes: about 1.5 to 2 lb meat or 4 to 6 cups veggies
- Ingredients
- 1/4 cup olive oil
- Juice + zest of 1 lemon
- 2 garlic cloves, minced
- 1 tsp dried oregano (or Italian seasoning)
- 1/2 tsp salt
- 1/4 tsp black pepper
Quick method
Mix. Coat. Marinate 1 to 6 hours (veggies 20 to 60 minutes). Grill.
2) Honey Mustard Marinade (grilled chicken breast friendly)

Sweet. Tangy. A little sharp. The one that makes picky eaters quiet!
Best for: grilled chicken breast, chicken thighs, pork tenderloin
Makes: about 1.5 to 2 lb meat
Ingredients:
- 1/4 cup Dijon mustard
- 2 tbsp honey
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 garlic clove, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
Quick method
Stir. Coat. Marinate 2 to 8 hours. Grill.
3) Skirt Steak Kabob Marinade (best steak kabob marinade vibes)

Savory. Bold. Char-friendly.
This one makes steak kabobs taste like a steakhouse.
Best for: skirt steak, flank steak, steak kabobs
Makes: about 1.5 to 2 lb steak
Ingredients:
- 1/4 cup soy sauce
- 2 tbsp olive oil
- 2 tbsp lime juice (or lemon)
- 2 garlic cloves, minced
- 1 tbsp brown sugar or honey
- 1 tsp ground cumin
- 1/2 tsp black pepper
Quick method
Whisk. Coat steak. Marinate 30 minutes to 4 hours. Grill hot and fast.
4) Steakhouse Garlic Herb Marinade

Rich. Herby. Classic.
Smells expensive the moment it hits the grill.
Best for: filet mignon, sirloin, ribeye, mushrooms, zucchini
Makes: about 1.5 to 2 lb meat
Ingredients:
- 1/4 cup olive oil
- 2 tbsp Worcestershire sauce
- 1 tbsp balsamic vinegar
- 2 garlic cloves, minced
- 1 tsp dried rosemary (or thyme)
- 1/2 tsp salt
- 1/4 tsp black pepper
Quick method
Mix. Coat. Marinate 1 to 6 hours (filet 30 minutes to 2 hours). Grill.
5) Korean BBQ Marinade

Sticky. Savory. Addictive.
This is the one people ask you to make again.
Best for: steak strips, chicken thighs, pork shoulder slices
Makes: about 1.5 to 2 lb meat
Ingredients:
- 1/4 cup soy sauce
- 2 tbsp brown sugar or honey
- 1 tbsp sesame oil
- 1 tbsp rice vinegar (or apple cider vinegar)
- 2 garlic cloves, minced
- 1 tsp grated ginger
- Optional: 1 tsp gochujang or sriracha
Quick method
Whisk. Coat. Marinate 1 to 8 hours. Grill over medium heat so it doesn’t burn.
6) Maple Dijon Marinade (for pork chops grilling)

Sweet. Tangy. Smoky on the grill.
Pork chops that don’t taste dry.
Best for: pork chops, chicken thighs
Makes: about 1.5 to 2 lb meat
Ingredients:
- 1/4 cup olive oil
- 2 tbsp Dijon mustard
- 2 tbsp maple syrup (or honey)
- 1 tbsp apple cider vinegar
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Quick method
Whisk. Coat. Marinate 2 to 12 hours. Grill.
7) Jerk-Style Marinade (grilled chicken wings and thighs)

Spicy. Warm. A little sweet.
Backyard vacation flavor.
Best for: grilled chicken wings, thighs, drumsticks, shrimp
Makes: about 1.5 to 2 lb meat or 1 to 1.5 lb shrimp
Ingredients:
- 1/4 cup olive oil
- 2 tbsp lime juice
- 1 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tsp allspice
- 1/2 tsp cinnamon
- 1/2 to 1 tsp chili flakes (to taste)
- 2 garlic cloves, minced
Quick method
Mix. Coat. Marinate chicken 2 to 12 hours (shrimp 15 to 30 minutes). Grill.
8) Cuban Mojo Marinade

Garlicky. Citrusy. Loud.
Makes pork and vegetables taste insanely fresh.
Best for: pork, chicken, grilled vegetables
Makes: about 1.5 to 2 lb meat or 4 to 6 cups veggies
Ingredients:
- 1/4 cup olive oil
- Juice of 2 oranges (or 1 orange + 1 lime)
- Juice of 1 lime
- 4 garlic cloves, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Quick method
Mix. Coat. Marinate 1 to 8 hours (veggies 20 to 60 minutes). Grill.
9) Honey Sriracha Marinade (marinade for grilled shrimp too)

Sweet heat. Sticky edges. The glaze that disappears fast!
Best for: grilled chicken tenders, thighs, shrimp
Makes: about 1.5 to 2 lb chicken or 1 to 1.5 lb shrimp
Ingredients:
- 1/4 cup honey
- 2 tbsp sriracha
- 1 tbsp soy sauce
- 1 tbsp lime juice (or rice vinegar)
- 1 garlic clove, minced
Quick method
Mix. Coat. Marinate chicken 1 to 4 hours (shrimp 10 to 20 minutes). Grill over medium heat.
10) Garlic Soy Marinade for Grilled Salmon

Savory. Slightly sweet. Super clean. This is a weeknight salmon win, and one of my favorite marinades!
Best for: marinade for grilled salmon, also great on shrimp
Makes: about 1.5 to 2 lb salmon (or 1 to 1.5 lb shrimp)
Ingredients:
- 1/4 cup soy sauce
- 2 tbsp olive oil
- 1 tbsp honey or brown sugar
- 1 tbsp rice vinegar (or lemon juice)
- 2 garlic cloves, minced
- 1 tsp grated ginger
Quick method
Whisk. Coat. Marinate salmon 20 to 45 minutes (shrimp 10 to 20 minutes). Grill.
11) Tangy BBQ Vinegar Marinade (for chicken, ribs, pork)

Tangy. Smoky. Old-school BBQ. The one that makes meat taste “done right.”
Best for: grilled chicken, boneless pork ribs, pork chops
Makes: about 1.5 to 2 lb meat
Ingredients:
- 1/4 cup apple cider vinegar
- 2 tbsp olive oil
- 2 tbsp BBQ sauce
- 1 tbsp Dijon mustard
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Quick method
Whisk. Coat. Marinate 1 to 8 hours. Grill.
Grilling doesn’t need to be complicated, it just needs a little help.
Pick one marinade. Mix it in a bowl. Toss in your protein or veggies. Let the fridge do the work.
