This recipe is simply wonderful and is one of my favorites! To give you an idea, my nephews prefer these keto muffins to the traditional muffins I used to make full of sugar!

Keto Chocolate Chip Muffins – Low-Carb Recipe

First of all, this recipe uses protein powder. My followers always ask me if there is a substitute. Well, there is no direct substitute. I don’t recommend it, but if you want, you can omit this ingredient. The muffins will taste the same, but they won’t rise as well or look as pretty. It’s up to you!
Ingredients:
- ½ cup sour cream
- 3 large eggs
- ¾ teaspoon vanilla extract
- ½ cup Swerve Brown lightly packed
- 2 ½ cups almond flour
- ⅓ cup unflavored whey protein powder (can sub egg white protein)
- 2 teaspoon baking powder
- ¼ teaspoon salt
- ⅓ cup + 1 tbsp mini keto chocolate chips
Instructions:

Step 1 – Preheat and Prepare the Pan
Preheat the oven to 350°F, and line a standard metal muffin pan with 12 parchment paper liners or silicone liners.

In a large bowl, whisk together the sour cream, eggs, and vanilla extract.
Step 3 – Add Sweetener
Add the sweetener to the wet ingredients and whisk until well combined, breaking up any clumps with the back of a fork.
Step 4 – Combine Dry Ingredients
Add the almond flour, protein powder, baking powder, and salt to the wet mixture. Now, stir until the ingredients are well mixed.
Step 5 – Add Chocolate Chips
Fold in ⅓ cup of the chocolate chips into the batter.
Step 6 – Fill Muffin Cups
Divide the batter evenly among the prepared muffin cups.
Top each muffin with a few more mini chocolate chips.
Step 7 – Bake
Bake the muffins in the preheated oven for 18 to 25 minutes, until they are golden brown and firm to the touch.
Step 8 – Cool
Remove the muffins from the oven and let them cool in the pan before serving.
