As a family member of a vegetarian (my nephew), I struggled with finding the best recipes that are flavorful and healthy in carb intake. When he came to my house, I was disconsolate, because I didn’t have any dish to serve him that I knew he would really like.

Well, after several months of trying to find the perfect meals I stumbled on some sumptuous recipes. 

In this article, I will share some of my favorite summer dinner recipes for vegetarians. These meals are easy to make and flavorful.
