Watermelon is one of those summer ingredients I always buy with one plan in mind, only to realize there is enough left for three more recipes. Luckily, it works in far more than fruit salad.

These watermelon recipes include frozen drinks, colorful desserts, quick snacks, fresh salads, and even a few savory dishes for the grill. Whether you are planning a backyard cookout, feeding hungry kids by the pool, or simply trying to use up a giant watermelon, there is plenty here to try.

1) Watermelon No-Bake Cheesecake By Pankobunny

These individual cheesecake cups are so cute and much easier than they look. The colored cookie layers create the watermelon rind, while chocolate chips become the little seeds. Give them at least 30 minutes to chill before serving so the filling has time to firm up.

2) Fresh Watermelon Cake By Princess Pinky Girl

This was a huge hit because it looks like a decorated layer cake but is actually made from fresh watermelon, whipped cream, and berries. It takes about 25 minutes, although I prepare the watermelon base earlier and add the whipped topping shortly before serving.

3) Frozen Watermelon Margaritas By Crayons & Cravings

I keep frozen watermelon ready for these margaritas all summer. They only need watermelon, tequila, lime, ice, and about 10 minutes in the kitchen. Double or triple the recipe when friends are coming over because one blenderful disappears incredibly fast at a backyard party.

4) Two-Ingredient Watermelon Sorbet By Eat the Gains

This sorbet has become my favorite way to use an extra-sweet watermelon. It is made with just frozen watermelon and lime juice, with no ice cream maker needed. Freeze the fruit for around five hours, then blend it when you are ready for dessert.

5) Watermelon Salad With Feta and Mint By Love and Lemons

The salty feta, creamy avocado, cucumber, mint, and sweet watermelon make this much more exciting than a basic fruit salad. It takes only 15 minutes, but I assemble it shortly before eating so the watermelon stays crisp and the herbs remain fresh.

6) Grilled Spot Prawn and Watermelon Kabobs By Flavour and Savour

Watermelon on the grill was a surprise the first time I tried it, but it works beautifully with the smoky, slightly spicy prawns. These colorful kabobs take just 21 minutes from start to finish and make an impressive appetizer without keeping anyone stuck at the grill.

7) Watermelon Popsicles With Cucumber and Lime By Veggie Inspired

These popsicles taste incredibly fresh and are a great break from heavier, overly sweet frozen treats. Blend the three main ingredients in about 15 minutes, pour everything into molds, and freeze for at least three hours. I usually make them the night before.

8) Homemade Watermelon Lemonade By The Speckled Palate

This lemonade is always one of the first drinks to disappear at a summer cookout. Fresh watermelon softens the sharpness of the lemon without hiding it, and the entire pitcher takes around 15 minutes. Serve it very cold with plenty of ice.

9) Fresh Jalapeño Watermelon Salsa By Unsophisticook

This salsa is sweet, spicy, crunchy, and far more interesting than another bowl of ordinary tomato salsa. Preparation only takes 15 minutes, but let it chill for an hour before serving. That resting time makes a noticeable difference as the lime, jalapeño, and watermelon flavors combine.

10) Grilled Chicken With Watermelon Mango Mint Salsa By Averie Cooks

This is the watermelon recipe I make when I need an actual summer dinner rather than another snack or dessert. The juicy barbecue chicken and bright watermelon-mango salsa work so well together. Allow about an hour, including the time needed to marinate the chicken.

11) Strawberry Watermelon Cucumber Salad By Two Peas & Their Pod

This colorful salad has been such a reliable choice for picnics and pool parties. The strawberries add sweetness, the cucumber keeps it crisp, and feta gives it a salty finish. It serves eight and takes only 15 minutes, so it is easy to prepare at the last minute.

12) Watermelon Pie By Spicy Southern Kitchen

This creamy watermelon pie is wonderfully retro, and people are always curious when I bring it out. The filling takes about 10 minutes to prepare, but the pie needs at least two hours in the refrigerator. It can also be frozen for an extra-cold summer dessert.

13) Watermelon, Tomato and Burrata Salad By Always Order Dessert

Watermelon and tomatoes may seem like an unusual pairing, but add creamy burrata, berries, basil, lemon, and olive oil, and it all makes sense. I serve this as an easy summer lunch or a beautiful first course when friends come over.

14) Easy Fruity Watermelon Pizza By Blogghetti

Watermelon pizza is always a winner with kids, and it looks so cute on a summer party table. The thick watermelon wedges are topped with a creamy lemon-vanilla drizzle and fresh berries. It takes just 15 minutes, so make it shortly before serving.

15) Watermelon Smoothie By Plant Based RD

I love making this for breakfast when I have leftover watermelon in the refrigerator. Frozen strawberries and bananas make it thick and creamy, while lime keeps it bright and fresh. Everything goes into the blender and is ready to drink in only five minutes.

16) Three-Ingredient Watermelon Granita By Chef Immaculate Ruému

This granita looks elegant, but it is made with only watermelon, sugar, and orange. The light, icy texture is exactly what I want after a heavy summer meal. Set aside around two and a half hours, since the watermelon needs enough time to freeze completely.

17) Watermelon Fries By The Soccer Mom Blog

These watermelon fries are super trendy, so cute, and surprisingly practical for children to hold. A crinkle cutter gives them the fun fry shape, while the strawberry yogurt dip makes them feel like a proper treat. The whole platter is ready in about 15 minutes.

Watermelon is refreshing straight from the refrigerator, but these recipes prove that it can do so much more. You can blend it into drinks, freeze it into desserts, add it to savory salads, put it on the grill, or turn it into a fun snack for the kids.

Start with one recipe the next time you cut open a watermelon, then keep the rest of this list nearby. By the end of summer, you may find yourself buying an extra watermelon just to make another one.
