One-pot dinners are my favorite solution for those evenings when I want something homemade but cannot face a sink full of dishes afterward. Everything cooks together, which keeps cleanup manageable while allowing the pasta, rice, meat, vegetables, and sauce to absorb plenty of flavor.

From creamy pasta and hearty rice skillets to chili, lasagna, and chicken and dumplings, these 17 easy recipes make dinner simple, filling, and delicious.. Some are ready in less than 30 minutes, while others require a little more simmering time but barely any hands-on work.

1) One-Pot Chicken Alfredo By No. 2 Pencil

This creamy chicken Alfredo is one of those dinners that disappears fast. Everything, including the uncooked pasta, simmers in the same pan and is ready in about 30 minutes. Use freshly grated Parmesan for the smoothest sauce, and add a splash of milk when reheating leftovers.

2) Cajun Chicken and Sausage Pasta By From Valerie’s Kitchen

I love this one when plain pasta feels too boring. Chicken, smoky andouille, bell peppers, Cajun seasoning, and Parmesan create a bold, creamy dinner in only 17 minutes. Reduce the Cajun seasoning slightly for younger eaters, or add extra at the table for more heat.

3) One-Pot Creamy Chicken Parmesan Pasta By Melissa’s Southern Style Kitchen

This chicken Parmesan pasta has all the cozy flavors of the classic dish without breading chicken or washing several pans. It takes about 50 minutes and makes eight servings, so I like it for larger families or for guaranteeing a generous lunch the next day.

4) Garlic Butter Steak and Potatoes By Little Sunny Kitchen

Steak and potatoes always feels like a proper dinner, and this version keeps everything in one skillet. The garlic butter sauce makes it especially good, while the whole meal takes about 40 minutes. Cut the potatoes evenly so they become tender without overcooking the steak bites.

5) One-Pot Chicken and Dumplings By Pound Dropper

This is the recipe I reach for when I want serious comfort food without spending the entire evening cooking. The chicken stew and homemade dumplings are finished in about 30 minutes. Mix the dumpling batter while the broth thickens so the process moves quickly.

6) One-Pot Sausage and Tortellini By The Country Cook

Sausage and cheese tortellini is such an easy combination, but the creamy tomato sauce makes this taste far more special than the effort suggests. It is ready in 25 minutes and tastes even better the next day. Add spinach near the end for an effortless vegetable boost.

7) One-Pan Tuscan Chicken Orzo By Simply Organic

This creamy Tuscan chicken orzo looks colorful enough for company but is still easy enough for a normal weeknight. Sun-dried tomatoes, spinach, Parmesan, and a little red pepper give it plenty of flavor in 35 minutes. Use less red pepper if your family prefers mild dinners.

8) One-Pot Beef Stroganoff By The Girl Who Ate Everything

I keep this beef stroganoff for nights when everyone wants something rich and comforting. Ground beef makes it much quicker than traditional versions, and the egg noodles cook directly in the sauce. It takes around 35 minutes, and the cooking wine can simply be left out.

9) One-Pot Chili Mac and Cheese By RecipeTin Eats

Chili mac is always a huge success because it combines two comfort-food favorites in one pot. This version takes only 25 minutes and has beef, beans, pasta, tomatoes, and plenty of melted cheese. It also freezes well, making it a smart recipe to double.

10) Easy Enchilada Rice By The Country Cook

This cheesy enchilada rice is packed with salsa, peppers, corn, enchilada sauce, and a golden layer of cheese. I add shredded rotisserie chicken or black beans when serving it as dinner. It reheats beautifully, so any leftovers make an easy work lunch the following day.

11) One-Pot Cheesy Taco Pasta By Mother Thyme

This taco pasta is one of my favorite ways to make Taco Tuesday feel different without creating extra work. It is ready in about 35 minutes, and the ground beef, salsa, taco seasoning, and cheese are always crowd-pleasers. Crushed tortilla chips add the best finishing crunch.

12) One-Pot Cheesy Chicken and Broccoli Rice By What Molly Made

This cheesy chicken, broccoli, and rice skillet has become the kind of dependable dinner every busy household needs. It takes just 27 minutes and uses no canned soup. Grate the cheese from a block, then reheat leftovers with a splash of broth so the rice stays creamy.

13) One-Pot Sausage and Rice By Tornadough Alli

Smoky kielbasa, peppers, tomatoes, and well-seasoned rice make this a really hearty one-pot dinner. It takes about 70 minutes, but much of that time is spent letting the rice cook. Leave out the cayenne and chipotle powder when making it for anyone sensitive to spice.

14) Easy One-Pan Lasagna By Spend With Pennies

Homemade lasagna normally leaves my kitchen looking disastrous, which is why this one-pan version is such a winner. There is no separate pot for boiling noodles, and dinner is ready in about 50 minutes. Use a deep skillet or Dutch oven so the layers fit comfortably.

15) One-Pot Korean Beef and Rice By The Salty Marshmallow

This Korean-inspired beef and rice has that sweet, savory, slightly spicy flavor that makes takeout-style dinners so addictive. Everything cooks in one pot in about 40 minutes. It is also excellent for meal prep and can be frozen for up to two months.

16) Easy One-Pot White Chicken Chili By With Peanut Butter on Top

This white chicken chili is creamy, hearty, and much lighter than many traditional versions. Chicken, white beans, corn, salsa verde, green chiles, and cream cheese come together in only 25 minutes. I set out avocado, cilantro, cheese, and tortilla chips so everyone can customize a bowl.

17) One-Pan Coconut Curry Chicken and Rice By Jenn Eats Goood

This coconut curry chicken and rice feels fresh and comforting at the same time, with red curry paste, coconut milk, lime, vegetables, and tender chicken thighs. It takes about an hour and stores well for four days, so I especially like it for planned weekday lunches.

The best one-pot dinners do more than save on cleanup. Cooking everything together allows the pasta and rice to absorb the sauce, seasonings, and savory flavors that might otherwise be left behind in a separate pan.

For the fastest weeknight options, start with the Cajun chicken pasta, sausage tortellini, chili mac, cheesy chicken and broccoli rice, or white chicken chili. When there is more time for dinner to simmer, the lasagna, sausage and rice, and coconut curry chicken are well worth the wait.
