Above you have the brisket just seasoned, ready to go into the smoker. Below you have all the ingredients you need to season the brisket.
Ingredients:
- 1 tablespoon cumin
- 1 cup of brown sugar
- 2 tablespoons smoked paprika
- 3 tablespoons dried mustard
- 1 teaspoon salt
- 1/2 tablespoon fresh ground black pepper
- 1 cup of amber ale
Instructions:
Step 1: Prepare the Dry Rub
Mix the dried ingredients to create a flavorful dry rub. Generously coat the entire brisket with the rub, ensuring even coverage.

Place the coated brisket in a ziplock bag, remove as much air as possible, and seal it. Let it marinate in the refrigerator for at least 24 hours to absorb the flavors.
Step 3: Smoke the Brisket
Transfer the marinated brisket to a smoker tray, pouring all the juices from the bag over the meat. Smoke the brisket at 135°C for at least 30 minutes, or longer if desired.
Step 4: Moisturize with Beer
Occasionally spray the brisket with beer using a spray bottle to keep it moist during smoking.
Step 5: Wrap and Continue Cooking
Wrap the brisket in a double layer of thick foil, sealing it well with a full cup of beer inside. Continue cooking until the internal temperature reaches 93°C.
Step 6: Save the Cooking Juices
Reserve the cooking juices from the foil to use as a base for a rich gravy.
Step 7: Slice and Serve
Slice the brisket against the grain to ensure tender pieces. Serve with the prepared gravy for added flavor.
