Almost everyone I know is afraid of making bread. They think it’s incredibly difficult and that it always turns out badly. But let me tell you that’s not true!

Making bread is easy, whether it’s made with zucchini or not, you just have to follow the right recipe.

I speak from experience, the more complicated the recipe, the worse it is. That’s why I decided to share this recipe with you, because it’s the simplest and most delicious I know! Believe me, anyone will be able to follow this recipe from start to finish.

My Special Zucchini Bread Recipe

Zucchini Bread

As my followers already know, I don’t like to beat around the bush. I’ll simply give you the ingredients you need and show you the step by step process to have your zucchini bread ready as quickly as possible.

Ingredients:

First of all, gather all the ingredients you need for this recipe. I recommend that you do not change the quantities, as I have already adjusted them over the years.

  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Step 1 – Preheat your oven

Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.

Step 2 – Prepare the zucchini

Grate the zucchini using a box grater or a food processor. Set aside.

Step 3 – Mix the dry ingredients

In a medium bowl, whisk together the flour, baking soda, cinnamon, baking powder, and salt.

Step 4 – Mix the wet ingredients

In a large bowl, beat the eggs. Add the vegetable oil, granulated sugar, brown sugar, and vanilla extract. Mix until well combined.

Step 5 – Combine wet and dry ingredients

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.

Step 6 – Add zucchini

Fold in the grated zucchini until evenly distributed throughout the batter

Step 7 – Bake and Cool

Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
