This recipe is one of my favorites because it includes a bunch of vegetables that I LOVE and even some boiled chicken (which is optional).
The best part of all is that you can make this recipe to take to work or anywhere!
You can also store it in the fridge for 2 days (that was the maximum time I tested). So, without further ado, check out the fabulous recipe below!
Easy Keto Broccoli Salad Recipe – Low Carb

First of all, don’t be scared by the list of ingredients! There are several ingredients, but I’m sure you have them all in your pantry. Furthermore, you can always remove some ingredients if you want.
Ingredients:
- 1 cup broccoli florets
- 1/2 cup diced cheese (cheddar or your choice)
- 1 boiled egg, sliced
- 1 small zucchini, sliced into thin rounds
- 1/2 red pepper, sliced
- 1/2 green pepper, sliced
- 1 cup cooked chicken breast, diced or shredded
- 1 small cucumber, sliced
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
Step 1 – Prepare the Vegetables
Steam or blanch the broccoli florets until tender but still crisp. Let them cool. Slice the zucchini into thin rounds. Now, slice the red and green peppers, and the cucumber.

If not already cooked, season the chicken breast with salt and pepper. Grill, bake, or pan-fry until cooked through. Let it cool and then dice or shred.
Step 3 – Boil the Egg
Boil the egg for about 10 minutes, then cool, peel, and slice.
Step 4 – Assemble the Salad
In a large mixing bowl, combine the broccoli, diced cheese, sliced egg, zucchini, red and green peppers, cucumber, and chicken.
Step 5 – Prepare the Dressing
In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
Step 6 – Mix and Serve
Pour the dressing over the salad ingredients and toss gently to combine, and adjust seasoning to taste with additional salt and pepper if needed.
Serve immediately or chill in the refrigerator for 30 minutes to let the flavors meld!
This low-carb recipe seems complicated, but the truth is that you will be able to prepare it in just a few minutes.
