1) It Enhances Flavor
Chicken has its juice and flavor. However, a marinade enhances that flavor. It infuses the chicken with layers of taste – depending on the marinade you use. You can have salty and sweet, tangy and smoky flavors.
2) Marinade Improves Tenderness
The acidic ingredients in marinade break down the tough muscle fiber in your meat, making it softer and easier to chew.
3) Moisture Retention
The best way to prevent your chicken from becoming bland and dry is by marinating it.
Also, the marinade gives your grilled chicken a beautiful golden crust.
It adds a depth of flavor to your chicken, making every bite delicious and satisfying.
The marinade also has health benefits. It can help in reducing the formation of harmful substances that can form during high-temp cooking like grilling.

Simple Tips for the Best Grilled Chicken

Beyond a great marinade, here are some simple tips to ensure your grilled chicken turns out perfect every time:
- Bone-in, Skin-on chicken pieces are juicier. They are the best for grilling.
- Dry the chicken before grilling. It prevents excess moisture and ensures that the skin of your chicken doesn’t get crispy.
- Season both sides evenly and allow your chicken to come to room temperature for 15 minutes.
- Don’t over-marinate. It could break down the chicken too much.

Olive oil has a very low smoke point; meaning it starts to burn at lower temperatures. If you brush your food with olive oil and throw it on a 600 degree grill, you’re going to get a bitter, burnt taste that will ruin your food. A better choice to use when grilling is avocado or grapeseed oil.
Totally agree! Olive oil’s great in the marinade, but for brushing or high-heat grilling, avocado or grapeseed oil is definitely a smarter choice. Thanks for the tip!
Amazing marinade. Definitely one of the best ones. can I use it on pork or beef?
Thank you! So glad you liked it!
Yes, you can definitely use it on pork (like chops or tenderloin) and even beef strips or steaks. Just adjust the marinating time a bit—beef can go longer, and pork does great with a few hours. Let me know how it turns out!
Is this recipe for 1lb of chicken or more? If I’m making enough to feed my crew I’ll probably be using up to 3 lbs of chicken.
Can you bake it in the oven?
Hi Tina! 🙂
Absolutely! You can bake the marinated chicken in the oven at 400°F (200°C) for about 25–30 minutes, or until it’s cooked through and golden. Just make sure the internal temp reaches 165°F (75°C). It turns out delicious and juicy!
Thanks – I was wondering the same thing. I’ll be trying the recipe mid-week.
What amount of chicken does this recipe marinate?
Hi Jamie 🙂
This marinade works well for about 2 to 2.5 pounds of chicken. If you’re using more, you can easily double the recipe to keep everything coated and flavorful!
I marinated chicken tender meat overnight using this recipe. The chicken was delicious! I am so glad I found this recipe!
Hi Mary! 🙂
I’m so glad you liked it and I appreciate you sharing it with me!
How do you think this would work in the air fryer?
Robyn, I’ll be honest with you. I’ve never tried it, but I think it’ll still be good, since most recipes don’t turn out much differently in the oven. If you try it, let me know how it turns out! 🙂
Hi, since hot honey is so popular now, what do you think about using it in this marinade? Has anyone tried it?
This was so good! So hard to keep chicken breast juicy- but this marinade fit the bill!
I would love to try this recipe. Can I cook it in a pan on top of the stove?
