  • 2 tbsp lemon juice (helps tenderize) 
  • 1 tbsp honey or brown sugar (balances flavors & enhances caramelization)
  •  3 cloves garlic, minced (for rich, deep flavor)
  •  1 tsp smoked paprika (adds a smoky touch) 
  • 1 tsp dried oregano (for a herby kick) 
  • 1 tsp black pepper (a little spice) 
  • ½ tsp salt (adjust as needed)

  2. Add chicken, ensuring each piece is well coated. 
  3. Marinate for at least 30 minutes (or up to 24 hours for max flavor).

  • Don’t over-marinate. It could break down the chicken too much.

    Olive oil has a very low smoke point; meaning it starts to burn at lower temperatures. If you brush your food with olive oil and throw it on a 600 degree grill, you’re going to get a bitter, burnt taste that will ruin your food. A better choice to use when grilling is avocado or grapeseed oil.

      Totally agree! Olive oil’s great in the marinade, but for brushing or high-heat grilling, avocado or grapeseed oil is definitely a smarter choice. Thanks for the tip!

      Yes, you can definitely use it on pork (like chops or tenderloin) and even beef strips or steaks. Just adjust the marinating time a bit—beef can go longer, and pork does great with a few hours. Let me know how it turns out!

        Is this recipe for 1lb of chicken or more? If I’m making enough to feed my crew I’ll probably be using up to 3 lbs of chicken.

      Absolutely! You can bake the marinated chicken in the oven at 400°F (200°C) for about 25–30 minutes, or until it’s cooked through and golden. Just make sure the internal temp reaches 165°F (75°C). It turns out delicious and juicy!

      This marinade works well for about 2 to 2.5 pounds of chicken. If you’re using more, you can easily double the recipe to keep everything coated and flavorful!
