My Favorite Go-To Salmon Marinade – Always Moist, Never Fishy!

Ingredients (for 4 salmon fillets or ~1.5 lbs):
Below are the ingredients you need to make this special salmon marinade:
- 1/4 cup olive oil
- 3 tablespoons soy sauce
- 2 tablespoons fresh lemon juice (or lime)
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup or honey
- 2 garlic cloves, minced
- 1 teaspoon dried dill (or 1 tbsp fresh dill, chopped)
- Zest of 1 lemon (optional, for extra brightness)
- 1/4 teaspoon black pepper
- 1 small sliced chili
Instructions:
Follow these simple instructions to successfully make this flavorful salmon marinade:
- Mix all the ingredients in a bowl or jar.
- Place salmon fillets skin-side down in a dish or zip-top bag.
- Pour the marinade over your salmon. Ensure each piece is well-coated.
- Let it sit in the fridge for 30 minutes to 1 hour. no longer, to avoid a mushy texture.
- Remove from the marinade and let the excess drip off. Cook using your preferred method:
- Bake: 400°F (200°C) for 12–15 minutes
- Grill: 4–5 minutes per side on medium heat
- Pan-Sear: 3–4 minutes per side on medium-high
- Once your salmon is well-cooked, garnish it with fresh herbs or lemon slices and enjoy with rice, veggies, or a light salad.
How Long Should You Marinate Salmon?
Because salmon is a delicate fish, you don’t need to over soak it for hours like tougher meats. It would only create a mushy texture, which nobody wants.
Therefore, if you want to enjoy your fish, leave it in the marinade for no more than 1 hour. This is the sweet spot. Between 30 minutes to 1 hour is just enough for deep flavor without overdoing it.
It is not advisable to leave your salmon in the marinade overnight. The acid might break down your fish excessively, making the texture less enjoyable.
Smart Ingredient Swaps That Still Work!
My salmon marinade is versatile. Therefore, you can swap ingredients and still get the best flavor and texture.
Let me recommend a few:
- Instead of Soy Sauce, use Tamari. It’s great for a gluten-free marinade.
- Substitute honey with maple
- Feel free to experiment with several spices until you get the best taste you want.
- You can also substitute lemon with lime if you want a sharp, tangy flavor.
