Ingredients (for 1.5–2 lbs of protein or vegetables): 

Below are the ingredients you need for this marinade:

  • 1/3 cup soy sauce
  • 3 tablespoons honey or brown sugar 
  • 2 tablespoons rice vinegar 
  • 2 tablespoons sesame oil 
  • 2 tablespoons water 
  • 2 teaspoons cornstarch (optional, for a thicker glaze) 
  • 3 garlic cloves, minced 
  • 1 teaspoon grated fresh ginger 
  • Optional: 1/2 teaspoon red pepper flakes (for a mild kick)

  1. Whisk together all the ingredients in a bowl or jar. If you want your marinade to double as a stir-fry sauce, add cornstarch. 
  2. Once the marinade is well mixed, add chicken, beef, tofu, or chopped veggies to a zip-top bag or shallow container. Pour the marinade over and toss for even coating. 
  1. The next step is to refrigerate. Now, proteins tend to stay longer than veggies.
    • Chicken or beef: 1 to 4 hours
    • Tofu or veggies: 30 minutes to 1 hour.
  1. Cook your proteins or veggies.
    • For Stir Fry: Heat a tablespoon of oil in a hot skillet or wok. Add marinated ingredients and cook until done.
  1. If you want your marinade to serve as a sauce for “glazing”, simply simmer the leftover marinade in a saucepan for 3-5 minutes. When it is thickened and glossy, pour it over the finished stir-fry. (This is optional.)
  1. Now, everything is completed. Simply serve with steamed rice, noodles, or sautéed greens for a fast and flavorful meal. 

How to Marinate Meat, Tofu, or Veggies for Stir-Fry

Marinating is a great way to infuse flavor and improve the texture of your ingredients in stir-fry dishes. Let me show you how to do this. 

Let’s start with meat!

Timing: 

  • For very large pieces of meat that exceed 6kg, 24 hours is the ideal time. 
  • If your meat weighs less than 5kg but more than 2kg, 6 to 12 hours is the perfect time.
  • For medium pieces of meat like chicken halves, and so on, leave your meat in the marinade for 4 to 8 hours.
  • Steaks, bone-in chicken breasts or legs, and so on, 1 to 3 hours is the best time.
  • Small pieces of meat, like boneless chicken breasts, fish fillets, or shrimp, should spend about 2 hours in the marinade. 

Now let’s go for Tofu!

Timing:

  • For lighter flavors, 30 minutes – 1 hour.
  • For bolder flavors, 2 to 4 hours.

Best Practices:

  • Remove excess moisture by pressing tofu before marinating.
  • Use firm or extra-firm tofu. It holds up better during marinating and cooking.
  • To ensure even marinating and cooking, cut your tofu into uniform pieces. 

Finally, Veggies!

Timing:

  • Hard veggies like carrots or bell peppers, 15 to 30 minutes. 
  • Soft veggies like broccoli or leafy greens, 10 to 15 minutes.

Customize It Your Way: Swaps and Add-Ins!

This tangy teriyaki marinade is versatile and easily customizable. Use the following swaps and add-ins to infuse an extra depth of flavor.

  • Replace honey with maple syrup.
  • Add pineapple juice for sweetness. 
  • On cold days, chili is a good ingredient for a kick of heat. 
  • Low-sodium soy sauce adds a savory umami flavor to your marinade.
