Once the evenings start getting cooler, pasta goes straight back into my regular dinner rotation. There’s just something about a creamy sauce, baked cheese, sausage, pumpkin, mushrooms, or butternut squash that feels right when fall arrives.

These 21 cozy fall pasta recipes include everything from quick 20-minute dinners to slow-braised ragù for a lazy weekend. And don’t let “slow-braised ragù” scare you. I know it sounds like something from a Michelin-star restaurant, but it’s surprisingly easy to recreate at home.

I included plenty of family-friendly options too, along with a few pumpkin and squash recipes that really make the most of fall flavors.

1) One Pot Pumpkin Alfredo with Smoked Sausage By No. 2 Pencil
