Fall is the time of year when I start craving warm, comforting dinners, but I still don’t want to spend the whole evening cooking or washing dishes. That’s why one-pot meals are always in heavy rotation in my house once the weather cools down.

These are the kinds of dinners everyone actually gets excited about: creamy pasta, hearty soups, cheesy casseroles, tender pot roast, and plenty of family-friendly favorites.
