Follow Me NowOnce the mornings start getting cooler, I always find myself reaching for apples, pumpkin, maple, cinnamon, and all those warm fall flavors again. Some of these breakfasts are ones I like for slow weekends, while others are perfect for prepping ahead when I know the week is going to be busy.
Here are 21 fall breakfast recipes I’ve really enjoyed making, including plenty of sweet options, a few hearty savory breakfasts, and some easy make-ahead ideas too.
1) Pumpkin Cinnamon Rolls By Sally’s Baking Addiction

These are one of my favorite breakfasts to make when I really want the house to smell like fall. The rolls stay beautifully soft, and that maple cream cheese icing is honestly what makes them. I usually get them ready the night before so the morning is much easier.
2) Pumpkin Cream Cheese Stuffed French Toast By It’s All Good Vegan

I made this when I wanted something a little more special than our usual French toast, and the creamy pumpkin filling was such a good surprise. It’s rich, cozy, and definitely one I’d make again for a lazy weekend breakfast. The pecans on top add a really nice crunch too.
3) Caramel Apple Pancakes By Lemon Blossoms

The warm caramel apples are what sold me on these pancakes. I like spooning plenty over the top instead of drowning everything in syrup. They were a big hit at breakfast, especially while the apples were still warm, and they feel much more special than regular pancakes without being difficult.

Follow Me Now4) Pumpkin Pie Baked Oatmeal By Once Upon a Pumpkin

I love baked oatmeal in fall because I can make one pan and have breakfast handled for several mornings. This one has plenty of pumpkin and warm spice without feeling overly sweet. I usually warm a piece back up and add a little maple syrup or chopped pecans before eating.
5) Baked Apple Cider Donuts By Sally’s Baking Addiction

These always remind me of the apple cider donuts you get at fall farms and orchards. Reducing the cider first really does make a difference in the flavor, so I wouldn’t skip that step. I love them best while they’re still fresh and covered in that cinnamon-sugar coating.
6) Biscuits and Gravy Casserole By I Am Homesteader

This is the one I make when I know everyone is going to wake up hungry. It’s hearty, comforting, and much easier than making individual plates of biscuits, sausage, eggs, and gravy. I especially like it for family breakfasts because you can assemble it ahead and just bake it in the morning.
7) Pumpkin Cream Cheese Muffins By Julie Marie Eats

The cream cheese center makes these so much better than a basic pumpkin muffin. They’re soft, nicely spiced, and just sweet enough for breakfast with coffee. These disappeared quickly when I made them, so I’d definitely make a full batch even if you think you only need a few.
8) Maple Dijon Breakfast Croissant Sandwiches By A Bright Moment

These have become one of my favorite ideas when I’m doing breakfast or brunch for other people. The buttery croissant, eggs, bacon, sausage, and cheese are already good together, but the maple-Dijon flavor makes them stand out. They look impressive on the table without being complicated to put together.
9) Apple Fritter Breakfast Casserole By Easy Family Recipes

This one is dangerously easy considering how good it tastes. I like it when I’m craving apple fritters but don’t want to actually make and fry them. The cinnamon rolls and apples turn gooey and caramelized as they bake, and it’s one of those breakfasts both kids and adults happily go back for.
10) Caramel Apple Crisp Overnight French Toast By Fetty’s Food Blog

I made this for a weekend breakfast and loved that almost all the work was already done when I woke up. The soft brioche underneath and crunchy apple topping work so well together. The caramel makes it pretty indulgent, so I usually serve this when breakfast is basically doubling as dessert.
11) Pumpkin Chocolate Chip Bread By Dinner at the Zoo

This is the kind of fall recipe I make once and then keep slicing from all week. Pumpkin and chocolate chips are always a good combination, and the bread stays nice and moist. I love a thick slice with coffee in the morning, and it freezes really well if you make two loaves.
12) Gluten-Free Pecan Waffles By Well Fed Baker

I really like these when I’ve had enough pumpkin but still want something that feels like fall. The toasted pecans give the waffles a great texture, and maple syrup is obviously perfect on top. I usually make extra because leftover waffles crisp back up surprisingly well for an easy breakfast later.
13) Caramel Apple Cinnamon Rolls By Modern Honey

These take a little more effort, but they’re absolutely worth making when you have a slow fall morning. The apple filling makes every roll extra gooey, and the salted caramel on top is ridiculously good. I like preparing the rolls the evening before and finishing them fresh the next morning.
14) Maple Sausage Breakfast Sandwiches By Munchin’ With Maddie

I’ve found these really handy for busy mornings because they’re filling, easy to grab, and don’t feel like boring meal prep. The maple sausage gives them that little fall twist without making the sandwich too sweet. I make several at once and keep extras ready for later in the week.
15) Cranberry Orange Muffins with Greek Yogurt By Blue’s Best Life

I always start craving cranberry and orange as we get closer to the holidays, and these muffins have such a nice balance of tart and sweet. The Greek yogurt keeps them soft instead of dry. They’re especially good slightly warm, and I love making them when we have people over for coffee.
16) Maple Pecan Overnight Oats By Beaming Baker

These are what I make when I want fall flavors but have absolutely no interest in cooking breakfast in the morning. I prep the oats before bed, then add a few extra pecans on top before eating. The maple and cinnamon make them taste much more indulgent than my usual overnight oats.
17) Crunchy Brioche French Toast with Sautéed Cinnamon Apples By Lovely Delites

The crunchy coating on this French toast is such a good idea. It gives the outside a completely different texture while the brioche stays soft in the middle. Then you add the warm cinnamon apples on top, and it feels like a restaurant brunch even though it only takes around 20 minutes.
18) Caramel Apple Monkey Bread By Simply Recipes

This is such a fun breakfast to put on the table when everyone is eating together. Pulling off those sticky pieces of cinnamon dough with little bits of apple is half the appeal. It’s definitely messy, but nobody complained about that once the caramel started getting passed around.
19) Easy Apple Pie Overnight Oats By Plant Based RD

I like these for the mornings when I want something quick but still want it to taste seasonal. The cinnamon apples make plain overnight oats so much better. I usually make the apple topping ahead too, then breakfast is literally just opening the fridge and putting everything together.
20) Bacon Butternut Squash Hash By Emily Bites

After several sweet fall breakfasts, this savory hash is exactly what I want. The combination of salty bacon, roasted butternut squash, and apple works much better than I expected the first time. I like serving it with a fried egg on top and letting the yolk run into everything.
21) Smoky Bacon Sweet Potato Hash & Eggs By Joyful Healthy Eats

This is one of those breakfasts that keeps me full well past the morning. The sweet potatoes get tender, the bacon brings plenty of smoky flavor, and cooking the eggs right with the hash keeps everything simple. I love adding avocado at the end for something cool and creamy.
I could happily rotate through these breakfasts from the first cool morning of September right through Thanksgiving. Some are definitely special weekend treats, while others are easy enough to prep for a busy week. Either way, there are plenty of apples, pumpkin, maple, cinnamon, and cozy fall flavors to choose from.
