Follow Me NowOnce the weather starts cooling down, casseroles go right back into my regular dinner rotation. They’re warm, filling, usually easy to serve, and so many of them can be assembled ahead of time, which makes busy fall evenings much easier.
I pulled together 21 of my favorite fall casserole recipes, with everything from cheesy baked pasta and loaded potatoes to chicken pot pie, shepherd’s pie, enchiladas, and even a really good vegan chili cornbread casserole.
There are plenty of family-friendly options here, along with a few that work especially well for potlucks, Sunday dinners, and holiday gatherings.

There are quick weeknight options, make-ahead dinners, family favorites, and a few hearty recipes that are perfect when you’re feeding a bigger group.
I’d start with the baked ziti, chicken pot pie casserole, or shepherd’s pie for a really cozy dinner, but the loaded potato casseroles are hard to resist too. With 21 different recipes to choose from, there’s plenty here to keep dinner interesting all season.
