Sugar-Free Chocolate Pudding Dessert – Easy KETO Recipe
These ingredients are enough to make dessert for 2 to 4 people, depending on the size of each serving. This one serves 3 people perfectly.
Ingredients:
- 2 cups Heavy cream (divided into 1/4 cup and 1 3/4 cup)
- 1 1/2 tsp Unflavored gelatin powder
- 1/4 cup Besti Powdered Monk Fruit Allulose Blend
- 1/4 cup Dutch processed cocoa powder
- 1/4 tsp Sea salt
- 2 tsp Vanilla extract
- Raspberries (optional)
Instructions:
Step 1 – Mix Gelatin
Take 1/4 cup of heavy cream and pour it into a small bowl. Sprinkle the unflavored gelatin powder evenly over the cream. Whisk immediately until combined. Set this mixture aside to allow the gelatin to bloom.
Step 2 – Combine Ingredients
In a medium saucepan, mix the remaining 1 3/4 cups of heavy cream, the powdered monk fruit allulose blend, Dutch processed cocoa powder, and sea salt.
Step 3 – Heat Mixture
Place the saucepan over medium-low heat. Stir constantly for about 5 minutes until the mixture becomes smooth and starts to bubble. Be careful not to let it reach a boil.
Remove the saucepan from the heat source. Stir in the vanilla extract thoroughly.
Step 4 – Mix in Gelatin
Add the bloomed gelatin to the warm cream mixture. Whisk until the gelatin is fully dissolved and the mixture is smooth.
Step 5 – Cool Pudding
Allow the pudding to cool for about 10 minutes, just enough so it won’t melt the plastic wrap. Whisk again to remove any film that may have formed on the top.
Place plastic wrap directly on the surface of the pudding to prevent a skin from forming.
