Summer is coming and the desire to eat ice cream is increasing, a lot! I’ve already published some ice cream recipes here on the website, but none of them were healthy (not even close…).
So, I decided to publish a special low-calorie keto ice cream recipe that I’ve known for years, which is incredibly easy to make and very tasty!
As I know that not everyone has an ice cream maker, I published 2 separate recipes. The ingredients are exactly the same, just the step by step changes. So, prepare the 2 ingredients needed for the recipe right now and start preparing your Keto ice cream now!
2-Ingredient Keto Ice Cream Recipe
For this recipe we will only need chilled heavy cream and sugar free sweetened condensed milk at room temperature. These are two simple ingredients that you certainly have in your pantry! As I have the recipe without a machine, you have no excuse not to start making this healthy ice cream recipe right now!
Ingredients:
These ingredients are used to make keto ice cream for 7 people. If you want, you can double the recipe or split it in half to make it for just 3 people. It’s up to you!
- 500 g (2 cups) Heavy Cream – chilled
- 250 g (9 ounces) Sugar Free Sweetened Condensed Milk – room temperature
- Blueberries (optional, I love blueberries!)
Instructions With Machine:
If you have an ice cream maker, your job will be a little easier. Check out the step by step to have the ice cream ready in just a few minutes.
Step 1 – Whip the Cream
Pour chilled whipping cream into a mixing bowl or stand mixer bowl. Now, whip to a medium stiff stage, avoiding a hard stiff stage.
Step 2 – Add Condensed Milk
Pour room temperature sugar-free sweetened condensed milk into the whipped cream and whip at medium speed until combined, being careful not to over whip.
Step 3 – Churn the Ice Cream
Now, transfer the mixture into your prepared and properly chilled ice cream maker tub. Churn according to your ice cream maker’s instructions until done.
Step 4 – Serve or Store
Transfer the finished ice cream into a piping bag (optional, with or without a decorative tip) and pipe out in a decreasing spiral.
Finally, serve immediately or transfer to a freezer-safe container for later!
Instructions Without Machine:
