This recipe happened on one of those days when I wanted comfort food but I also wanted it to be… easy. You know the kind of dinner where everyone’s hungry, the kitchen is already a mess, and you’re trying to pull off something that feels fun without making five different pans?

That’s exactly what this Philly Cheesesteak Pasta is for.

It has everything I love about a cheesesteak: beef, peppers, onions, melty cheese, but it turns into this creamy pasta situation that feels like the kind of meal you’d order out… except you made it in your own kitchen in sweatpants.

Also, I’m not even going to pretend this is “light.” It’s not. It’s cozy and filling and it makes leftovers disappear fast.

Easy Philly Cheesesteak Pasta for Busy Family Dinners

Ingredients

  • 12 oz rigatoni or penne (about 3 1/2 cups dry pasta)
  • 1 lb ground beef (or thinly sliced steak, if you want to go classic)
  • 1 tbsp olive oil (optional, only if your beef is very lean)
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 2–3 cloves garlic, minced
  • 1 tsp salt (start with 3/4 tsp, adjust later)
  • 1/2 tsp black pepper
  • 1 tsp paprika (optional but really good here)
  • 1 tbsp Worcestershire sauce
  • 2 cups beef broth (or chicken broth)
  • 1 cup milk (or half-and-half for extra creamy)
  • 1 cup shredded provolone (or sliced provolone torn up)
  • 1 cup shredded mozzarella (for extra melt)
  • 1/2 cup grated Parmesan (optional, but adds a nice savory finish)
  • Chopped parsley (optional)

Optional add-ins (only if you want):

  • Mushrooms (classic cheesesteak vibe)
  • Red pepper flakes (if you like a little heat)

How to Make Philly Cheesesteak Pasta (Step-by-Step)

Step 1: Brown the beef

In a large skillet or deep pan, cook the ground beef over medium-high heat until browned. Break it up as it cooks.

Drain extra grease if needed (I leave a little for flavor, but not a puddle).

Step 2: Add peppers + onion

Add the diced onion and green bell pepper to the pan. Cook for about 4–5 minutes, until they start to soften.

Step 3: Add garlic + seasoning

Stir in the garlic, salt, pepper, paprika, and Worcestershire. Cook for 30 seconds until it smells amazing (that’s how you know it’s ready).

Step 4: Add pasta + liquids

Pour in the beef broth and milk. Stir, then add the dry pasta. Make sure it’s mostly submerged.

Step 5: Simmer until pasta is tender

Bring everything to a gentle simmer, cover, and cook for 12–15 minutes, stirring once or twice so it doesn’t stick.

When the pasta is tender and most of the liquid is absorbed, you’re ready for the best part.

Step 6: Add the cheese

Turn the heat to low. Stir in provolone and mozzarella until melted and creamy. If you’re adding Parmesan, stir it in now too.

Step 7: Finish + serve

Taste and adjust salt/pepper. Top with parsley if you want to make it look “I’m a real adult who garnishes things.” Serve hot.

  • Steamed broccoli
