This Crockpot Garlic Parmesan Chicken and Potatoes is exactly that!
I made it on one of those days where everything felt a little “go-go-go.” I had chicken in the fridge, potatoes that needed to be used, and zero desire to stand at the stove. I threw everything into the slow cooker, cleaned the kitchen while it cooked, and by the time dinner rolled around, it smelled like I’d been cooking all day.
Also: Jorge walked into the kitchen and immediately did that thing where he lifts the lid, breathes in dramatically, and says “ok wow.” Valentim showed up too, of course, acting like he paid for the groceries.
This recipe is garlicky, cheesy, and cozy in the best way. The potatoes come out soft and buttery, the chicken stays tender, and the little Parmesan-garlic coating turns into this savory, creamy goodness at the bottom that you’ll want to spoon over everything.

Dump-and-Go Crockpot Garlic Parmesan Chicken and Potatoes

Ingredients
- 1 1/2 to 2 lb boneless, skinless chicken breasts or thighs, cut into bite-size pieces
- 1 1/2 to 2 lb baby potatoes, halved (quarter them if they’re big)
- 3 tbsp olive oil (or melted butter)
- 4–6 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup chicken broth (or water)
- 1/2 cup grated Parmesan cheese (plus more to finish)
- 1 to 1 1/2 cups shredded mozzarella (optional, but it gives that “Pinterest melt”)
- 1 tbsp chopped parsley (optional)

This is one of those recipes that feels almost too easy. It’s basically “dump, cook, melt cheese, eat.”

Add the chicken and potatoes to a big bowl. Drizzle in the olive oil, then add the garlic, Italian seasoning, paprika, salt, pepper, and Parmesan. Toss until everything looks well coated and a little “dusty-cheesy.”
Step 2:
Pour everything into the crockpot and spread it out so the potatoes aren’t all stacked in one spot.
Step 3:
Pour the chicken broth around the edges (this keeps it juicy and helps the potatoes cook through). Cover with the lid.
Step 4:
Cook until the potatoes are fork-tender and the chicken is cooked through.
Cook Time (choose one):
- LOW: 5–6 hours
- HIGH: 2 1/2–3 1/2 hours
Chicken temp: 165°F in the thickest piece.
Step 5 (my favorite part):
If you want that melty top, sprinkle mozzarella over everything, put the lid back on, and cook 10–15 minutes more until the cheese is melted and irresistible.
Step 6:
Top with parsley and extra Parmesan. Serve it hot, straight from the slow cooker, and don’t be surprised if people “taste test” five times before actually sitting down.
Little Things That Make It Even Better!
- Chicken thighs stay super juicy in the crockpot. If you use breasts, check earlier so they don’t dry out.
- Cut the potatoes all about the same size so they finish together.
- Want more saucy goodness at the bottom? Add an extra 1/4 cup broth.
- If you love strong flavor, add a small handful of Parmesan right at the end before serving.
What I Serve It With
This is already a full meal, but sometimes I add:
- a quick salad (because I like pretending I’m balanced)
- steamed broccoli or green beans
- or I just eat it as-is and call it perfect
This is the kind of dinner that saves a weekday. It’s cozy, simple, and the leftovers are honestly even better the next day.
