Ingredients:

  • 4 cups chicken stock (store-bought or homemade)
  • 1 tablespoon soy sauce
  • 1/2 teaspoon freshly grated ginger
  • 2 tablespoons water
  • 2 – 3 tablespoons cornstarch
  • 2 eggs
  • 2 – 3 green onions, chopped
  • Salt and freshly ground black pepper, to taste

In a large pot, combine the chicken stock, soy sauce, and freshly grated ginger. Stir well to blend the flavors.

Step 2 – Bring to a Boil

Place the pot over medium-high heat and allow the mixture to come to a boil. This helps the flavors develop fully.

Step 3 – Thicken the Soup

In a small bowl, whisk together the cornstarch and 2 tablespoons of water until fully dissolved. Slowly pour the cornstarch mixture into the boiling stock while stirring. This will help thicken the soup. Once added, reduce the heat to a gentle simmer.

Step 4 – Prepare the Eggs

In a separate bowl, crack the eggs and beat them until frothy. This helps create the signature egg ribbons in the soup.

Step 5 – Create the Egg Ribbons

    First made this soup 62 years ago after visiting Chinatown in Toronto. I will make as a starter for a dinner party in two weeks. Simple, healthy and delicious!

    Me and my husband love your egg drop soup. I added 3/4 cup of shredded chicken and 1/2 cup of rice and love it that way as well.
