PF Chang’s Egg Drop Soup Recipe

Ingredients:
- 4 cups chicken stock (store-bought or homemade)
- 1 tablespoon soy sauce
- 1/2 teaspoon freshly grated ginger
- 2 tablespoons water
- 2 – 3 tablespoons cornstarch
- 2 eggs
- 2 – 3 green onions, chopped
- Salt and freshly ground black pepper, to taste

Follow Me NowIn a large pot, combine the chicken stock, soy sauce, and freshly grated ginger. Stir well to blend the flavors.
Step 2 – Bring to a Boil
Place the pot over medium-high heat and allow the mixture to come to a boil. This helps the flavors develop fully.
Step 3 – Thicken the Soup
In a small bowl, whisk together the cornstarch and 2 tablespoons of water until fully dissolved. Slowly pour the cornstarch mixture into the boiling stock while stirring. This will help thicken the soup. Once added, reduce the heat to a gentle simmer.
Step 4 – Prepare the Eggs
In a separate bowl, crack the eggs and beat them until frothy. This helps create the signature egg ribbons in the soup.
Step 5 – Create the Egg Ribbons
Gently pour the beaten eggs into the simmering soup, stirring in a single direction as you pour. The eggs will form delicate ribbons as they cook in the hot broth.
Step 6 – Add Green Onions and Season
Remove the soup from the heat and stir in the chopped green onions. Taste the soup, then season with salt and freshly ground black pepper to your liking.
