I love summer! I really love it! In addition to the good temperatures, it is an excellent time to make our favorite summer recipes.
I recently published this vanilla ice cream recipe (the most popular on the site), but today I’m going to teach you a slightly different recipe, a summer cookies recipe!
This gourmet recipe is simple to make and very quick. You’ll just need to gather some basic ingredients and get to work! Shall we start making these delicious cookies? I’ll leave you with one more image, to make you more eager to get started!

You just need to gather a few ingredients to start making these cookies. If you want, you can always change some ingredients, but I recommend that you start by making the original recipe and changing it as you make the cookies.
Ingredients:
The ingredients below are used to make cookies for around 10 people. If you want, you can double the ingredients to make twice as many cookies.
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup colorful sprinkles (summer colors like yellow, blue, pink, and green)

Step 1 – Preheat Oven

Follow Me NowPreheat your oven to 350°F (175°C). Line baking sheets with parchment paper
Step 2 – Mix Wet Ingredients
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
Step 3 – Combine Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Step 4 –Add Sprinkles
Gently fold in the colorful sprinkles, distributing them evenly throughout the dough.
Step 5 – Shape Cookies
Roll the dough into 1-inch balls and place them on the prepared baking sheets about 2 inches apart. Flatten each ball slightly with the bottom of a glass.
Step 6 – Bake
Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
