Delicious! Thankyou for sharing your recipe. My first attempt at making cookies with coconut flower and they were a hit!
Thank you so much, Susania! I’m thrilled to hear your first attempt with coconut flour cookies was a success and that they were a hit! Your kind words made my day. If you try any variations or have more baking adventures, I’d love to hear about them! Happy baking!
Flavor is very good, just enough sweetness from the honey, oil and almond flour. I ended up using almond flour (I thought I had coconut but apparently I didn’t). So I was happy it could be done with that instead. I did have to add an additional cup of almond flour for it to come together for a thick dough that would hold together. Very tasty and soft. Should these be stored in the fridge or are they ok on counter? They seem very moist so I’m thinking fridge so they don’t spoil.
Hi Heidi! 🙂
I’m so glad you enjoyed the cookies and that almond flour worked out well for you – great improvisation!
As for storing the cookies, you’re spot on – because they’re so moist, it’s best to store them in the fridge to keep them fresh longer. Just pop them in an airtight container, and they should stay delicious for about 4-5 days. You can also freeze them if you want to keep them for a couple of weeks!
Thanks again for trying the recipe and leaving such a thoughtful comment. Happy baking!
I’m alway looking for something sweet but I have a refined sugar intolerance. This is perfect
I’m so glad this recipe is perfect for you! It’s always a win to satisfy a sweet tooth without refined sugar. Hope you enjoy every bite!
This is my first time using coconut flour! This is a pretty good recipie. I ended up using almond extract. They smell sooo good. I think I made them a bit to big but they were still soft and yummy! Thanks
Hi Tianna! That sounds wonderful! Almond extract is a great twist! So glad you enjoyed them. Thanks for trying the recipe!
Hello, i am from Delhi, India. We have high temperature here right. How to store these cookies? Can I keep them at room temperature?
Hi! The cookies should be fine at room temperature for 2–3 days in an airtight container, even in warm weather like Delhi’s. But because they contain eggs and coconut oil, it’s safest to refrigerate them if your kitchen gets really hot, they’ll stay fresh up to a week. You can also freeze them for longer storage! ❄️
Hey there! I’m from Yemen and I know what that life is like, if you have good relations with a local grocery shop, you can ask them if you can store a small bin for you where he stores ice cream that he sells for even a small monthly price… get creative & work something out… we Asians are nice
