Ingredients (Makes 8–10 muffins) 

You can increase the quantity of each ingredient (this depends on the number of muffins you want to make).

For the muffins: 

  • 1 ½ cups (180g) all-purpose flour 
  • 2 tsp baking powder 
  • ½ tsp salt 
  • ½ cup (100g) sugar 
  • ½ cup (120ml) milk 
  • ¼ cup (60ml) vegetable oil or melted butter 
  • 2 tbsp elderflower cordial (like Belvoir or homemade) 
  • 1 egg 
  • Zest of 1 lemon (optional, but brightens the flavor) 

For the glaze: 

  • ½ cup (60g) powdered sugar 
  • 1–2 tbsp elderflower cordial or lemon juice 
  • Fresh elderflowers for garnish (optional) 

Easy Step-by-Step: 

  1. Preheat your oven to 180°C (350°F).
  2. Line a muffin tin with paper liners. You can also grease lightly as an alternate method.
  3. In a bowl, mix all the dry ingredients.
  4. In another bowl, whisk milk, oil, egg, elderflower cordial, and lemon zest.
  5. Pour the wet ingredients into the dry ingredients and stir gently until combined. 
  6. Spoon the batter into muffin cups, filling each about ¾ full.
  7. Bake for 18-22 minutes, or until each muffin is golden and a toothpick comes out clean. 
  8. Before drizzling with glaze, let the muffins cool.
  9. Garnish with fresh elderflowers if you want.

Tips for the Perfect Glaze and Garnish

  • Chilled muffins are more dense and chewy than fresh, home-temperature ones. 
  • Slowly drizzle with glaze to make your muffins moist, tender, and absorbent. It helps the syrup soak into your muffins, creating a delightful, sticky texture!

This is optional, but you can try a fresh elderflower topping.

You can tweak things a little bit with the following tips:
