Ingredients

Ingredients for the cake: 

  • 4 eggs 
  • 100g sugar (½ cup) 
  • 40g cocoa powder (⅓ cup) 
  • 60g flour (½ cup) 
  • 1 tsp baking powder 
  • Pinch of salt 

Ingredients for the filling: 

  • 200ml heavy cream (¾ cup) 
  • 1 – 2 tbsp powdered sugar 
  • 1 tsp vanilla extract 

Ingredients for the cherry layer: 

  • 1 cup pitted cherries (frozen or jarred work!) 
  • 1 – 2 tbsp sugar 
  • 1 tsp cornstarch (optional, for thickening) 

Easy Step-by-Step: 

Step 1: Bake The Cake

Preheat the oven to 180°C (350°F).

Whisk eggs and sugar in a bowl.

Step 1

Now, pour in cocoa, flour, baking powder, and salt. 

Step 2

Mix everything until it forms a smooth texture.

Step 3

Spread the mixture evenly in the tray and bake for 10-12 minutes. 

Let your dough cool slightly before turning it out onto a parchment sheet.

Step 4

Afterwards, peel off the backing paper before letting it cool fully.

Step 2: Make the cherry filling

Combine cherries and sugar in a small saucepan.

Heat everything until it is juicy and slightly thickened. Add cornstarch (if using).

Stir everything together and let it cool. 

Step 3: Whip the cream

All you need is to beat cold cream with powdered sugar and vanilla until it’s fluffy and forms soft peaks.

Step 4: Assemble the roll

Spread your whipped cream over the cake, and add a row of cherries along the short edge.

The next step is to gently roll the cake up from the cherry end (you can use the parchment as a guide).

Let it chill for 1 hour before serving.

How to Roll a Cake Without Cracking? 

Use these simple tips to roll your cake without cracking.

  • Roll it while warm. At this point, the cake is still soft and can easily assume any shape without cracking.
  • Don’t overbake your cake. It would come out dry and likely crack while rolling.
  • Line your baking pan with parchment paper. You can easily lift the cake and roll it up cleanly with no sticking or stress.

As a beginner, even if a little crack happens, don’t panic. You can always cover it with whipped cream or powdered sugar. Practice makes perfect, and even imperfect rolls will still taste amazing with this recipe.
