Over the months, I’ve noticed that most of my followers prefer healthier and cheaper recipes (which is great!). So, I decided to make some “simpler” recipes that are easier, healthier and cheaper, starting with this grilled chicken with vegetables!
This recipe is very simple, very healthy and quick to make.
It’s an excellent recipe for those who don’t have much time to cook or even for those who like to eat well, but without much effort.
If you have chicken breasts (or thighs), you can start making this delicious dish. Shall we get started?
Grilled Basil Chicken and Tomatoes Recipe

As you can see in the photos, I grilled cherry tomatoes and zucchini with the chicken. You can choose other vegetables, such as corn, peppers, etc. It’s up to you!
Ingredients:
- 3/4 cup balsamic vinegar
- 1/4 cup tightly packed fresh basil leaves
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 8 plum tomatoes
- 1/2 zucchini
- 4 boneless skinless chicken breast halves (4 ounces each)
Instructions:
Step 1 – Prepare the Marinade
Combine the balsamic vinegar, basil leaves, olive oil, minced garlic, and salt in a blender. Quarter 4 of the plum tomatoes and add them to the blender. Blend until smooth.

Follow Me NowStep 2 – Marinate the Chicken
Place the chicken breasts in a bowl and pour 2/3 cup of the marinade over them. Cover and refrigerate for 1 hour, turning occasionally. Set aside the remaining marinade for later use.
Step 3 – Preheat the Grill
Lightly oil the grill rack and heat it to medium.
Step 4 – Grill the Chicken
Remove the chicken from the marinade, discarding the used marinade. Place the chicken breasts on the preheated grill. Cover and cook for 4-6 minutes on each side, or until the internal temperature reaches 165°F.
Step 5 – Grill the Tomatoes & Zucchini
Halve the remaining 4 plum tomatoes, and cut the zucchini into slices. Place them on the grill, cut side down. Grill for 2-4 minutes on each side until they are lightly browned.
Step 6 – Serve
Arrange the grilled chicken and tomatoes on a platter. Drizzle with the reserved marinade and serve immediately.
