My Favorite Crispy Honey Garlic Chicken Marinade Recipe

Ingredients (for 1.5–2 lbs boneless chicken thighs or breasts):
Here are the needed ingredients to make this honey garlic chicken marinade:
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar (or apple cider vinegar)
- 1 tablespoon sesame oil (optional, but adds richness)
- 4 garlic cloves, minced
- 1 teaspoon grated fresh ginger (or 1/2 tsp ground)
- 1 tablespoon cornstarch (helps with crispiness later)
- 1/2 teaspoon black pepper
- Optional: 1/2 tsp chili flakes for a bit of heat
Instructions:
This no-fail process is what I follow EVERY TIME, and it always delivers consistent results.
- The first step is making the marinade. Whisk together all the ingredients in a medium bowl. Ensure they are well mixed and blended.
- Place the chicken in a zip-top bag or dish and pour the marinade over it. Toss the chicken to ensure an even coating.
- Close the bag and refrigerate for at least 1 hour. But you can leave it for up to 8 hours (this depends on the depth of flavor you desire).
- Take out your chicken from the marinade and pat dry for extra crispiness.
- The next step is cooking. Here are the 3 possible ways to make that happen:
- Pan-Fry: Heat oil over medium-high heat and cook chicken for 5–6 minutes per side until golden and cooked.
- Air Fry: Spray chicken lightly with oil and air fry at 390°F (200°C) for 10–14 minutes, flipping halfway.
- Bake: Bake at 425°F (220°C) for 20–25 minutes, broiling the last 2 minutes for crisp edges.
- If you want to give your chicken an extra flavor, try this glazing method. Simply simmer the leftover marinade for 5 minutes and brush it over the cooked chicken before serving.
- Once this is done, serve your chicken. You can sprinkle it with sesame seeds and green onions. Pair it with rice, noodles, or stir-fried veggies for a wholesome meal.

Air Frying:
If you don’t want “oil”, you can still get a crispy chicken with the air frying method. It takes about 10-14 minutes of cooking time.
This method is perfect when you want a healthier, crispy texture with less mess.
Baking:
I love this method because it is easy and hands-off. It’s great when you are cooking for a group of people. Within 20-25 minutes, everything will be ready.
You can use this method when you have a lot to handle. Simply toss in your marinated chicken and walk away.
