Believe me, if even I can make this Keto broccoli soup, anyone can… As you may have noticed, I only publish easy recipes here on my website, such as the recipe for keto brownies. That’s because I’m not the best cook out there!
So, I always opt for simple, quick recipes with small margins for error. I see this as a good thing, because if I try the recipes and they turn out well, it means that anyone will be able to make them.

My Favorite Easy Keto Broccoli Soup Recipe

Below you have a list of all the ingredients needed to make this healthy keto soup. There are some that you can choose not to use, such as cheese and heavy cream. However, I recommend that you try the original recipe and change it as you make it more often.
Ingredients:
- 1 tablespoon butter;
- 1 small onion, diced;
- 2 cloves garlic, minced;
- 4 cups broccoli florets (fresh or frozen);
- 4 cups chicken or vegetable broth;
- 1 cup heavy cream;
- 1 1/2 cups shredded cheddar cheese;
- Salt and pepper to taste;
- Optional: 1/4 teaspoon nutmeg for added flavor.
Instructions:

Step 1 – Sauté the Onion and Garlic
In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Now, add the minced garlic and sauté for another minute.

Add the broccoli florets to the pot and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat and simmer until the broccoli is tender, about 10-15 minutes.
Step 3 – Blend the Soup
Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a blender and puree in batches, then return to the pot.
Step 4 – Add the Cream and Cheese
Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is creamy.
Season with salt, pepper, and nutmeg (if using) to taste.
Step 5 – Serve
Ladle the soup into bowls and garnish with extra shredded cheese or a dollop of sour cream if desired.
