Below are the 10 ingredients you need to make the perfect, moist, and sweet lemon blueberry muffins:
- 2 eggs
- 1 cup (200g) granulated sugar
- 1/2 cup (120ml) milk
- 1/2 cup (115g) melted butter
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- Zest of 1 lemon
- Juice of 1 lemon
- 1 cup (150g) fresh blueberries
Optional: coarse sugar for topping
Easy Step-by-Step:
The first step is to preheat the oven. 180°C (350°F) is the best temp.
Line your muffin tray with paper liners.
Afterwards, whisk together all the wet ingredients, like milk, and so on.

Once this is well mixed, add all the dry ingredients and mix until everything is well combined.

Fold in the blueberries using a spatula.

Scoop the batter evenly into the muffin liners with about ¾ full.

Top each with coarse sugar (this is optional if you want a golden, crunchy muffin top).

Bake for up to 22 minutes, or until you insert a toothpick and it comes out clean.
Let it cool slightly before serving and enjoying.

Can I Use Frozen Blueberries Instead of Fresh?
Yes, you can use frozen blueberries instead of fresh ones. However, ensure to use them straight from the freezer.
Don’t thaw! It causes color bleeding, which turns your muffins blue.
Why Are My Muffins Dry or Dense?
Overmixing or overbaking makes muffins dry or dense.
When you overmix, it gives your muffins a tough, chewy texture, which makes munching difficult and unsatisfying.
Overbaking will totally dry out the moisture in the muffins, thereby causing a dry texture.
Avoid both.
Can I Make These Muffins Gluten-Free or Dairy-Free?
Yes, you can make these muffins gluten-free or dairy-free. Swap the flour with gluten-free flour, and use plant-based milk or butter.
Doing this makes your muffins well-suited for your diet restrictions.
