I recently published a recipe for matcha ice cream that was sugar-free, and my followers seemed to love it!
Taking into account all this success, I decided to reinvent one of the most famous recipes on my website, vanilla ice cream, to remove the sugar and make it healthier.
That’s how this sugar-free vanilla ice cream recipe was born,with just 80 calories per serving!
It was an experience of mine that simply went well. Of course, I was inspired by other recipes, but the most important thing is that I tested it and prepared the entire step by step for you.

It may seem like a lie, but the truth is that this ice cream only contains 4 ingredients! I usually say that the simplest recipes are the best, believe me this recipe will prove that.

- 1 cup unsweetened almond milk;
- 3/4 cup unsweetened coconut cream;
- 1/3 cup allulose or monk fruit sweetener with erythritol;
- 1 teaspoon vanilla extract.
Instructions:
Step 1 – Prepare the Base:
In a large bowl, whisk together the unsweetened almond milk, unsweetened coconut cream, allulose (or monk fruit sweetener with erythritol), and vanilla extract until the sweetener is fully dissolved.


Step 2 – Freeze the Mixture:
Pour the mixture into a Ninja Creami pint container up to the fill line. Place the storage lid on the pint and freeze for at least 24 hours.


Step 3 – Process the Ice Cream:
Remove the pint from the freezer and take off the storage lid. Place the pint in the Ninja Creami machine.
Select the “Lite Ice Cream” program and let the machine run its cycle.


Step 4 – Optional Mix-In:
If you want to add mix-ins like sugar-free chocolate chips or nuts, create a 1 1/2-inch wide hole in the center of the processed ice cream and add the mix-ins. Then, run the “Mix-In” program.
Step 5 – Serve:
Serve immediately for a soft-serve texture or freeze for a few more hours for a firmer texture. I added coconut shreds on top of mine!
