The Meat Becomes More Tender
The acidic content in my marinade recipe breaks down the meat and makes it more tender and easier to chew.
Pork Tenderloin Marinade Recipe

Ingredients (for 1–1.5 lbs pork tenderloin):
Below are the ingredients you need for a 1-1.5 lbs pork tenderloin:
- 1/4 cup olive oil
- 3 tablespoons soy sauce
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey
- 3 garlic cloves, minced
- 1 tablespoon Dijon mustard
- 1 teaspoon dried rosemary (or 1 tbsp fresh, chopped)
- 1/2 teaspoon black pepper
- Optional: 1/4 teaspoon red pepper flakes for a hint of heat
Step-By-Step Process:
This is the step-by-step process I use EVERY TIME, and it gives me the perfect flavor and texture.
- Start by whisking together all the ingredients in a medium bowl until they are well mixed.
- Your pork tenderloin should be placed in a zip-top bag or shallow dish. Afterwards, pour the marinade over the pork. Cover and refrigerate for at least 2 hours.
Note: You can leave it in the refrigerator overnight. This gives a depth of flavor to your meat.
- Remove the pork from the marinade, and ensure it is pat dry.
- Once this is done, the next step is to cook your meat. Now, there are different ways to do this.
- Grill: Preheat to medium-high and grill for 15–20 minutes, turning occasionally, until internal temp reaches 145°F (63°C).
- Oven: Roast at 400°F (200°C) for 20–25 minutes, or until internal temp hits 145°F.
- Skillet: Sear on medium-high heat, 4–5 minutes per side, then finish in a 375°F oven for 10–15 minutes.
- After cooking your pork, let it rest for up to 10 minutes before slicing.
How to Marinate Pork Tenderloin for Maximum Flavor?
Let me give you some simple tips to help you achieve maximum flavor when marinating your pork tenderloin.
- Ensure you pat your pork dry before applying the marinade.
- Before marinating, poke a few shallow holes in your meat using a fork.
- When applying the marinade, check to be sure that the whole meat is fully coated.
- If you want maximum flavor, 6 hours – 24 hours is the ideal time for marinating your pork tenderloin. This gives your meat enough room to absorb all the flavor and also be properly broken down by the acidic content of your marinade.
- Flip the pork once or twice during marinating. It is a great tip for even coverage.
- Never marinate at room temperature.
- Re-using leftover marinade won’t give you the best flavor. I always advise a “freshly mixed” one.
- After removing from the fridge, let your pork rest for about 20-30 minutes before cooking.
Let’s finish!
With this straightforward process, you can always give your pork tenderloin an extra depth of flavor plus a tender texture that melts in the mouth.

I have been seeing a lot of dijon cream sauces to top pork tenderloin. I am looking to “fancy up” this recipe you have. Do you think a dijon cream sauce over the top for serving would be good with your marinated recipe or will it be too much?
