As I mentioned earlier, this tarator recipe is super easy, BUT delivers great results every time. I want you to read what comes next because it is the most important part of this article.
Ready?
Ingredients:
- 1 large cucumber, peeled and finely diced
- 1½ cups plain yogurt (ideally full-fat or Bulgarian-style)
- ½ cup cold water (adjust for desired consistency)
- 2 – 3 garlic cloves, minced
- 2 tbsp chopped fresh dill
- 2 tbsp chopped walnuts (plus extra for topping)
- 1 tbsp olive oil
- Salt and pepper to taste
Easy Step-by-Step:
Step 1: Prep the vegetables and nuts
So, it’s super easy! Dice the cucumber, mince your garlic, chop the dill, and roughly chop walnuts!
For extra flavor, you can toast the chopped walnuts in a dry pan. (optional).
Step 2: Mix the base
In a bowl, combine the diced cucumber, garlic, dill and walnuts. Season the mix with salt and a dash of pepper.
Step 3: Add Yogurt and Water
Pour the yogurt into the mix and stir well. Add cold water to thin out the yoghurt to your desired soup consistency (start with ½ cup).
Keep mixing until it is smooth and creamy.
Step 4: Finish with olive oil
Drizzle in the olive oil and stir again!
Step 5: Let it chill before serving
Refrigerate the soup for at least 30 minutes before serving. Before serving, top with extra dill and walnuts.
